Cake Truffles

Ingredients

  • No Bake Cake Truffles
  • You can use any flavor cake mix you prefer. I used Wilton candy melts to dip the truffles and then used a contrasting color of colored candy melts that I melted in a sandwich bag in the microwave to drizzle over the truffles before I garnished them with sprinkles. They can be made a week in advance.
  • Makes 60
  • 1 cup all-purpose flour
  • 3 cups yellow cake mix
  • 1 cup granulated sugar
  • 1 cup or 2 sticks unsalted butter, room temperature
  • 4 teaspoons clear vanilla extract
  • 2/3 cup rainbow sprinkles
  • 6 cups (16 oz) white chocolate melting wafers or candy melts
  • Sprinkles for decorating

Instructions

In a food processor, combine flour, yellow cake mix, sugar, butter, and vanilla extract. Blend until a firm dough forms and there are no lumps left. Remove dough from food processor and into a medium bowl. With a large spoon stir in rainbow sprinkles.

Use a 1-inch cookie scoop and roll dough into balls and place on a large baking sheet covered with wax paper. Place dough balls in freezer for 10 minutes.

Melt white chocolate in a double boiler, or in the microwave in 30 second increments, stirring each time. Dip truffle balls in melted white chocolate using toothpicks or a fork. Return to wax paper and immediately sprinkle the tops with rainbow nonpareils.

Let truffles coating harden in the fridge for 20 minutes. Store in an airtight container for up to a week.
