I love red peppers and this dish really highlights their sweetness with the addition of Hungarian paprika. I had some orange and red peppers which I used, but I love using yellow, red and orange peppers all together. I put a little sprinkle of Parmesan cheese on the dish right before I served it (probably not so authentic, but I felt like it!). Since I am trying to watch what I eat right now (the bain of my existence!), I used low fat sour cream which is not as rich (and delicious!) as the dish can be when you use a little heavy cream and regular sour cream to really make a creamy sauce.
