Mexican Lasagna

This is a delicious casserole and even though it has a few steps, it is so worth it in the end.  You layer tortillas with taco meat, a cream cheese and sour cream mixture, black beans, salsa and top it off with enchilada sauce and lots of cheese.  This dish freezes well and is also a great dish to take to a pot luck.  Make it as spicy or mild as you like.  Click here for the recipe….
