Buttermilk Biscuits

Ingredients

  • These quintessential buttermilk biscuits are easy to make and are deliciously light and fluffy.
  • Makes 12 Biscuits
  • 2 cups flour
  • 1 tablespoon double acting baking powder
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • ½ teaspoon baking soda
  • 4 tablespoons cold butter, cut into cubes
  • 1 ½ cup buttermilk, preferably low-fat
  • 1 cup flour
  • 1 tablespoons butter, melted

Instructions

Preheat oven to 500 degrees with the rack in the middle of oven. Spray a 9-inch round cake pan with oil.

In a food processor, add flour, baking powder, sugar, salt, and soda and pulse until incorporated. Add butter and pulse until it resembles coarse cornmeal. Transfer mixture to a mixing bowl and add buttermilk. Stir with a rubber spatula until mixture is incorporated.

Spray a ¼ cup cookie scoop with oil. Place 1 cup of flour on a plate. Scoop biscuits and drop in flour. With floured hands, gently roll in a ball and place in pan. Repeat with remaining dough. Brush melted butter over top of biscuits and place in oven. Bake for 5 minutes and then reduce the heat to 450 degrees, and continue baking for another 15 minutes or until light golden brown. Remove from oven, and allow to set for 4 minutes. Invert pan onto a clean kitchen town and gently break apart and serve.
