Chicken Shawarma Burger with Tahini-Lemon Sauce

Ingredients

  • Chicken Shawarma Burger with Tahini-Lemon Sauce
  • You can buy half a pound of boneless, skinless chicken thighs and half a pound of chicken breasts and use your food processor to grind the chicken, or just buy a pound of ground chicken or turkey. The chicken patties can be made the day before and you can make the tahini sauce up several days before.
  • Makes 4 patties

Instructions

2 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon paprika

1/2 teaspoon turmeric

1/4 teaspoon ground allspice

1/4 teaspoon chili powder

1/8 teaspoon ground cinnamon

1 teaspoon salt

1/2 teaspoon freshly ground black pepper

3 garlic cloves, grated

1 pound ground chicken or turkey

4 hamburger rolls, pita bread or wraps

1 large handful of arugula or romaine leaves

1 tablespoon olive oil

2 teaspoons lemon juice

salt and pepper to taste

pickled red onions - optional

sliced tomato - optional

Tahini-Lemon Sauce:

1/3 cup tahini sauce

Zest of 1 lemon plus 1/4 cup lemon juice

1 tablespoon honey or agave syrup

1 tablespoon olive oil

salt and freshly ground black pepper to taste

In a mixing bowl, add olive oil, spices, garlic and salt and pepper and mix well. Add ground chicken and gently mix to combine. Form into 4 patties. Place in refrigerator for 30 minutes or overnight.

In a small bowl, add tahini, zest, juice, honey, olive oil, salt and pepper and mix well. Taste for seasoning and add more lemon juice if needed. It should be the consistency of mayonnaise so add a little water if it is too thick.

Preheat grill or heat a skillet over medium high heat with some olive oil. Cook chicken burgers for 4-5 minutes, turn and grill other side until cooked through, about 4-5 minutes. Grill or toast the buns if desired.

In a small bowl, add arugula and sprinkle olive oil, lemon, salt and pepper and toss well.

To assemble the burger, put some tahini sauce on bun and place chicken patty, arugula, sliced tomato and pickled onion.
