Lebanese Lamb and Beef Arayes with Roasted Broccoli with Za’atar Spices and Parmesan Cheese

Ingredients

  • Lebanese Lamb and Beef Arayes with Roasted Broccoli with Za’atar Spices and Parmesan Cheese
  • You can use all beef if you prefer or even ground turkey.
  • Serves 2
  • Baharat Spice Mix:
  • 1/2 teaspoon sumac
  • 1/2 teaspoon thyme
  • 1 teaspoon toasted sesame seeds
  • 1/2 teaspoon allspice
  • 1/2 teaspoon coriander
  • 1/2 teaspoon cardamom
  • 1/2 teaspoon cumin
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 5 ounces ground lamb
  • 5 ounces ground beef
  • salt and pepper to taste
  • 1 teaspoon lemon zest
  • 2 teaspoons chopped fresh parsley
  • 2 tablespoons golden raisins or Thompson raisins, roughly chopped
  • 2 pita cut in half
  • 1/4 cup Labneh cheese or Greek yogurt
  • 1 teaspoon lemon zest
  • 2 teaspoons lemon juice
  • salt and pepper to taste
  • 2 cups broccoli, washed and trimmed
  • 2 tablespoons olive oil
  • salt and pepper to taste
  • 2 teaspoons Za'atar spice blend
  • 2 tablespoons grated Parmesan cheese

Instructions

Preheat oven to 450. Line 2 small baking sheets with foil. Set aside.

In a small bowl, combine Baharat spice mix. Set aside.

in a small skillet over medium high heat add some olive oil and onion. Cook the onion until lightly browned. Add garlic and Baharat spice mix and cook for 1 minute. Remove from heat and cool.

On a small baking tray lined with foil add broccoli and toss with olive oil, salt, and pepper. Set aside.

In a medium bowl, add lamb, beef, salt, pepper, zest, parsley, raisins, and cooled onion mixture and gently mix until combined. Evenly divide the mixture into 4 patties and gently press beef mixture into the pita. Carefully press on the sides to evenly distribute the filling. Place in oven and bake for 5-6 minutes and turn over and continue baking another 5-6 minutes or until golden brown and the meat has cooked through and the juices run clear.

Halfway through cooking the arayes, place broccoli in the oven on the bottom rack and cook for 5 minutes and turn. Sprinkle with za'atar spice blend and Parmesan cheese and cook another 3-4 minutes or until the broccoli is cooked through and the cheese is lightly browned.

While the arayes cook, in a small bowl, add Labneh cheese, zest, juice, salt and pepper and mix well. Taste for seasoning.

Remove the arayes and broccoli from the oven and place on serving plate. Serve the Labneh cheese sauce on the side.
