Thai Pork and Pineapple Kebabs


  • Thai Pork and Pineapple Kebabs
  • You can also use 4 thick cut pork chops and cut them into 1-inch pieces
  • Serves 4
  • 1 pork tenderloin, diced into 1-inch pieces
  • 1 cup coconut cream
  • 1 tablespoon oil
  • 2 garlic cloves. minced
  • 2 kaffir lime leaves, finely minced (optional)
  • 1 tablespoon grated lemon grass
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1-2 teaspoons Sriracha sauce or Thai red curry paste
  • juice of 1 lime
  • salt and fresh ground black pepper
  • 2 cups of pineapple chunks (either fresh or canned)
  • 1 onion, peeled, cut lengthwise and cut into slices


In a mixing bowl add all of the marinade ingredients and mix well. Add pork and mix well. Allow to marinate for at least 20 minutes or several hours.

Use a metal skewer (or wood skewers that have been soaking in water for an hour) and thread the pork pieces, pineapple and onion slices onto 4 skewers.

Preheat grill and cook the pork skewers for 3-4 minutes each side until they are browned.

Remove and serve.
