Chinese Chicken Salad with Peanut Vinaigrette

Ingredients

  • I buy a bag of shredded carrots and broccoli slaw from Trader Joe’s and use frozen snow peas and dethaw them and just add them whole to the salad. All the vegetables can be cut up the day before and you can make the vinaigrette the day before as well.
  • Serves 6
  • Peanut Vinaigrette:
  • ¼ cup rice wine vinegar
  • 2 tablespoons peanut butter
  • 1 tablespoon chopped fresh ginger
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 2 teaspoons toasted sesame oil
  • ½ cup canola oil
  • salt and freshly ground pepper
  • Salad Ingredients:
  • 2 cups shredded broccoli slaw or coleslaw
  • 2 heads romaine lettuce, chopped
  • 2 carrots, shredded
  • 1 red pepper cut in thin strips
  • 2 cups frozen snow peas, dethawed, or fresh snow peas, blanched
  • ¼ cup fresh cilantro leaves
  • 4 thinly sliced green onions
  • 2 cups shredded rotisserie chicken, or grilled chicken
  • ¼ cup chopped roasted peanuts
  • 1 cup chow mein noodles (optional)

Instructions

Whisk together the vinegar, peanut butter, ginger, soy sauce, honey, sesame oil, and canola oil in a medium bowl. Season with salt and pepper, and taste for seasoning.

Combine salad ingredients in a large bowl. Add the dressing and toss to combine.
