Asian Stir Fried Vegetables with Basil

Ingredients

  • Asian Stir Fried Vegetables with Basil
  • You can use cilantro or parsley if you don't have basil on hand. Thai basil is even better in this dish if you can find it at the store. You can use any vegetable you have on hand. Red pepper, zucchini, peas, green beans - anything works.
  • Serves 4
  • 1 tablespoon peanut or olive oil
  • 1 small onion, sliced
  • 2 cups sliced mushrooms
  • 3 garlic cloves, thinly sliced
  • 2 cups shredded cabbage
  • 10 stalks asparagus, end trimmed and cut in 2-inch pieces on diagonal
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 2 tablespoons hoisin sauce
  • fresh ground black pepper to taste

Instructions

In a large skillet over medium high heat, add oil and onion and saute until lightly browned. Add mushrooms and garlic and saute until lightly browned. Add remaining ingredients and stir to combine. Place a lid on skillet and cook for 1-2 minutes. Add some water if the pan is a little dry and needs some steam to cook the vegetables. Stir and cook for 1 minute. Test to see if the asparagus is cooked to your liking. Add basil and toss well. Remove to serving platter and serve.
