Couscous with Fresh Mint and Lemon

Ingredients

  • Couscous with Fresh Mint and Lemon
  • Couscous is actually a semolina pasta that is formed into small granules. I like to use whole wheat couscous and it is foolproof to cook and cooks in 5 minutes.
  • Serves 4
  • 2 cups chicken broth or water
  • salt and pepper to taste
  • 1 cup couscous
  • 2 tablespoons fresh mint, chopped
  • 1 teaspoon lemon zest
  • juice of 1 lemon

Instructions

In a saucepan, bring chicken broth, salt and pepper to a boil. Add couscous and gently stir. Place a lid, remove from heat and allow to sit for 5 minutes.

Fluff with a fork and add mint, zest and juice. Gently stir and taste for seasoning.

Serve.
