Chicken Sausage and Mini Ravioli Soup

Ingredients

  • Chicken Sausage and Mini Ravioli Soup
  • You can use any sausage you like or leave it out if you would like a vegetarian soup. Trader Joe's has a pre-cut mix of mire poix which is onion, carrot and celery which is a great cheat for soup. If you can't find mini ravioli you can use ditalini or any other small pasta.
  • Serves 12
  • 2 tablespoons olive oil
  • 4 chicken sausages (or any sausage you like) cut lengthwise and then in ¼ -inch pieces
  • 1 onion, diced
  • 1 carrot, diced
  • 1 celery, diced
  • 2 teaspoons dried oregano
  • 2 teaspoons dried thyme
  • 4 garlic cloves, minced
  • salt and pepper to taste
  • 4 cups chicken stock
  • 1 28-oz can crushed tomatoes
  • 4 cups water
  • ½ lb. mini cheese ravioli or ditalini or other small pasta
  • 1 15 oz. can cannellini beans, drained, rinsed
  • 2 tablespoons chopped fresh parsley
  • Parmesan cheese for garnish

Instructions

In a large stock pot, add olive oil over medium high heat. Add sausages and cook until lightly browned. Remove to a bowl and set aside.

Add onion, carrot, celery, salt and pepper and cook until the onions are lightly browned. Sprinkle oregano and thyme and mix well. Add garlic and cook for 1 minute. Add chicken stock, tomatoes and water and bring to a boil. Reduce to a simmer and cook for 30 minutes. Bring soup to a boil and add ravioli and cannellini beans and reduce to a simmer. Cook for 20-30 minutes or until the ravioli are cooked through and the starches from the ravioli has thickened the soup a little. Add parsley and taste for seasoning.

Serve and garnish with Parmesan cheese.
