Vanilla Cream Biscuits

Ingredients

  • Vanilla Biscuit Creams
  • Makes 30 1 ½ cookies
  • 1 cup butter, room temperature
  • 2 cups flour
  • 1/4 cup sugar
  • 1/3 cup heavy whipping cream
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla, almond, lemon, or orange extract
  • Buttercream Frosting:
  • 1/2 cup (1 stick) butter, room temperature
  • 3 cups powdered sugar
  • 1/2 teaspoon salt
  • 4 tablespoons half and half or milk
  • 2 teaspoons vanilla, almond, lemon, or orange extract

Instructions

Preheat oven to 375 degrees.

In a mixing bowl, add butter and beat well until smooth. Add remaining ingredients and mix until completely combined.

On a floured board, roll out dough 1/8" thick and cut out circles or any shape you want. Sprinkle each cookie with sugar and prick 3 times with a fork.

Bake for 7 -9 minutes. Remove from oven and let cool completely before icing.

To make Buttercream:

In a mixing bowl add butter and mix until smooth. Add remaining ingredients and slowly mix. When the powdered sugar has been incorporated, beat well for 1-2 minutes until light and fluffy. Consistency should be thick enough to spread and add more half and half or powdered sugar if necessary. Add food coloring if desired and mix again.

Frost one side of a cookie and sandwich another cookie on top.

Keep in plastic container.
