- Roasted Green Beans with Garlic and Parmesan
- Serves 6
- 2 tablespoons olive oil
- salt and pepper to taste
- 1 teaspoon thyme (optional)
- 2 garlic cloves, minced
- 1 ½ pounds green beans, washed and trimmed
- ¼ cup Parmesan cheese
Oven at 400 with rack in lowest position.
In a medium bowl, add olive oil, salt, pepper, thyme, and garlic and mix. Add green beans and toss well to coat. Tumble onto a cookie sheet and evenly spread out. Place on lower rack and cook for 4 minutes. Remove and with a spatula, toss gently and sprinkle Parmesan cheese over beans and place back in oven. Cook for 3-5 more minutes depending on doneness of the beans and remove and serve.
