Sautéed Green Beans with Tomatoes and Oregano

Ingredients

  • Sautéed Green Beans with Tomatoes and Oregano
  • Serves 6
  • 1 tablespoon olive oil
  • 1 small onion or shallot, chopped
  • 2 cloves garlic, minced
  • 1 1/2 pound fresh green beans, topped and tailed
  • 2 large tomatoes, diced or 1-8 oz can diced tomatoes
  • 1 tablespoon chopped fresh oregano or 2 teaspoons dried oregano
  • salt and pepper to taste

Instructions

In a skillet add olive oil over medium heat. Add onion and saute' until lightly golden brown about 6-8 minutes. Add garlic and cook for 1 minute. Add remaining ingredients, cover with a lid and bring to a boil. Remove lid and continue to cook over medium high heat until the green beans are cooked to your liking, about 6-8 minutes. Taste for seasoning and serve. If the beans are cooked and the sauce still has too much liquid, remove beans to serving dish and turn heat up to high and cook until desired consistency and then toss the sauce with the beans and serve. Add water if the skillet becomes too dry.
