- Roasted Beets and Carrots with Za'atar Spice
- Serves 6
- 4 yellow beets, peeled and cut in quarters
- 4 red beets, peeled and cut in quarters
- 10 rainbow colored carrots, peeled, ends trimmed
- 6 tablespoons olive oil
- salt and pepper
- za'atar spice mix
Preheat oven to 425 degrees. Line a large baking tray with foil for easier clean up.
In a medium bowl, add 3 tablespoons olive oil, salt and pepper and add beets and toss until well coated. To half of the baking tray, tumble beets on to a baking tray and arrange cut side down. Place baking tray on the bottom shelf of the oven and roast for 15-20 minutes or until browned.
Turn beets over. In the same bowl add remaining 3 tablespoons olive oil, salt and pepper and add carrots and toss until well coated. Tumble onto half of the baking tray and roast for 10 minutes and turn over and return to oven until the beets can easily be pierced with the tip of a knife for another 8-10 minutes. The last 5 minutes of cooking sprinkle with the za'atar spice mix and roast. Place on serving platter and serve.
