Salad with Raspberries, Blueberries, Shallots, Toasted Almonds and Goat Cheese with a Raspberry Vinaigrette

This is a great summer salad for using fresh raspberries and blueberries in season, and the goat cheese gives it a nice creaminess.  The dressing is made with raspberry vinegar, but you can also use red wine vinegar, champagne vinegar, sherry vinegar or anything you have on hand.  I have a hand held mandolin that slices the shallots very thin so they don’t overpower the delicate salad that I like to use.  The toasted almonds add a nice crunch, but you can use toasted pine nuts, walnuts, hazelnuts, candied nuts, anything you have on hand, but I recommend toasting any nut you use to bring out the flavors.  Click here for the recipe….
