Dutch Babies with Mixed Berries

Ingredients

  • You can serve Dutch Babies plain with a sprinkling of powdered sugar and lemon juice,or butter and maple syrup. You can thinly cut apples or pears and put them in the center with some cinnamon sugar and they gently roast, or scatter fresh or frozen berries over before you put it in the oven. For a savory Dutch Baby cut up and sauté some bacon and pour the batter into the skillet before you bake it.
  • Serves 4-6
  • 1 tablespoon butter or vegetable oil
  • 3 eggs
  • 1/3 cup flour
  • 1/2 teaspoon salt
  • 1/3 cup milk
  • 1 teaspoon vanilla

Instructions

Preheat oven to 425.

Add butter to a 12-inch cast iron skillet or oven proof skillet and when oven has come up to temperature, place skillet in oven for 3-4 minutes or until butter is melted and slightly bubbling.

In a blender add remaining ingredients and blend for 2 minutes.

Remove hot skillet from oven and pour batter into skillet. Return to oven and bake for 12-14 minutes or until puffed and golden brown.

Remove and cut into wedges and serve.
