Mixed Green Salad with Berries, Walnuts, Raspberry-Walnut Vinaigrette and Baked Goat Cheese

Ingredients

  • and Baked Goat Cheese*
  • Serves 4
  • Raspberry Vinaigrette
  • 1 tablespoon honey mustard
  • 1 teaspoon honey
  • 2 tablespoons raspberry vinegar
  • 6 tablespoons walnut oil or olive oil
  • salt and pepper to taste
  • In a bowl, whisk together the mustard, honey, vinegar, salt and pepper. Slowly drizzle the oil in a stream, and whisk the vinaigrette until it is emulsified. Season to taste.
  • Baked Goat Cheese
  • 8 oz. log goat cheese, cut into 8 slices
  • 1 egg, beaten
  • 1 cup Panko bread crumbs
  • salt and pepper to taste
  • Salad
  • 5 oz. bag mixed baby salad greens
  • 1 large shallot, thinly sliced
  • 1 cup sliced strawberries
  • 1 cup raspberries
  • 1 cup blueberries
  • 4 tablespoons toasted walnuts or almonds

Instructions

Preheat oven to 400.

In a small bowl, beat egg. Place bread crumbs on a plate. Dip cheese in egg and then in bread crumbs. Place on silpat lined cookie tray. Lightly spray cheese with oil. Bake for 10-12 minutes or until lightly browned. Serve.

In a large salad bowl, add all salad ingredients and gently toss. Add vinaigrette and lightly toss. Place on individual serving plates and top with goat cheese. Serve.
