- Chocolate Pear Pudding Cake
- Serves 4-5
- 1 -14-ounce can pear halves, drained
- 10 tablespoons butter, softened, plus more, for greasing
- 3/4 cup flour
- ¼ cup cocoa
- 1 ¼ cups sugar
- ½ teaspoon salt
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- 2 eggs
- 2 teaspoons vanilla extract
Preheat the oven to 400 degrees and grease an 8x8-inch ovenproof dish with butter.
Drain the pears and arrange them on the base of the prepared dish. Put all the remaining ingredients in a food processor or use an electric mixer and mix well.
Drop the batter over the pears and evenly spread the batter over the pears. Place in oven and bake for 25 minutes, or until the edges have lightly browned and the cake has mostly set. The cake will not be all the way cooked through and should have a more pudding-like consistency under the crust.
Allow to cool for 5-10 minutes and serve.
