I love this sundried tomato vinaigrette and it is also good on toasted crostini and topped with goat cheese, drizzled over vegetables or tossed in a salad. It’s quick to make in a mini food processor. Just add the sundried tomatoes, garlic, a little grating of onion, sherry vinegar and olive oil and it’s done in 30 seconds. You can also add fresh basil.
