- Couscous with Fresh Mint and Lemon
- Couscous is actually a semolina pasta that is formed into small granules. I like to use whole wheat couscous and it is foolproof to cook and cooks in 5 minutes.
- Serves 4
- 2 cups chicken broth or water
- salt and pepper to taste
- 1 cup couscous
- 2 tablespoons fresh mint, chopped
- 1 teaspoon lemon zest
- juice of 1 lemon
In a saucepan, bring chicken broth, salt and pepper to a boil. Add couscous and gently stir. Place a lid, remove from heat and allow to sit for 5 minutes.
Fluff with a fork and add mint, zest and juice. Gently stir and taste for seasoning.
